- Prep the pineapple: Cut off the top and bottom of the pineapple. Stand it upright and slice off the skin in strips. Remove the eyes with a small knife and cut into 1-inch chunks.
- Season: In a mixing bowl, toss pineapple chunks with oil, cinnamon (if using), honey or maple syrup (if using), and a pinch of salt until evenly coated.
- Preheat air fryer: Preheat air fryer to 400°F (200°C) for 2 minutes.
- Air fry: Arrange pineapple chunks in a single layer in the air fryer basket. Cook for 8–10 minutes, shaking halfway through, until golden brown with caramelized edges.
- Serve: Carefully remove and serve warm on their own or with vanilla ice cream.
